⅜ cup Spiced Vanilla Bean Sugar

2¼ tsp. Pure Madagascar Vanilla Extract

  • ⅜ cup Light brown sugar
  • ¾ Egg white (about 1 small egg white)
  • 12 oz. Pecan halves

Directions

    Heat the oven to 250°F and line a large baking sheet with parchment.

    In a medium bowl, stir together the light brown sugar, Spiced Vanilla Bean Sugar, Ground Nutmeg, Ground Ginger, and Kosher Salt.

    In a small bowl, whisk the egg white and Pure Madagascar Vanilla Extract together until frothy.

    Tip the pecans into a separate large bowl and pour the egg white mixture over the top, tossing to coat every nut.

    Sprinkle half of the sugar mixture over the pecans and toss again, then add the remaining sugar and toss once more so each pecan is evenly dressed.

    Spread the nuts in a single layer on the prepared baking sheet.

    Bake for about 1 hour, stirring every 15 minutes, until the pecans are golden brown and dry to the touch.

    Cool completely on the pan, then break apart any clusters. Makes 12 oz. of spiced nuts.
