Oven-Crisped Green Tomato Slices
Ingredients
Pine & Pepper Spices
- 3 to 4 Medium green tomatoes
- ⅜ cup Panko bread crumbs
- 3 Tbsp. Cornmeal
- 3 Tbsp. All-purpose flour
- 1 Egg
- 1 Egg white
- — Olive oil cooking spray

Set 2 baking sheets on the middle racks of the oven and heat the oven to 450°F so the sheets get screaming hot.

Slice the green tomatoes into ¼-inch rounds and pat them dry with paper towels.

In a shallow bowl, whisk the Panko, cornmeal, flour, your chosen seasoning (Chicken Fried Steak Seasoning, Italian Garden Herb Blend, Cajun Blackening, or Gulf Coast Creole Blend), and a few twists of Perfect Pair Salt & Pepper together.

In a second shallow bowl, whisk the egg and egg white together.

Dip each tomato slice into the egg, letting any excess drip off, then press both sides into the seasoned breading.

Carefully pull the hot baking sheets from the oven and mist them with cooking spray. Lay the breaded slices on the sheets in a single layer and mist the tops with another light spray of oil.

Roast for 6 to 8 minutes, flip, and roast another 5 to 7 minutes, until the coating is golden and crisp. Makes 18 to 22 slices.
