  • 4 cups Vodka — double- or triple-distilled; an inexpensive potato vodka works beautifully

Directions

    Combine the vodka and Juniper Berries in a Mason jar. Cover and let stand for 24 hours, giving the jar a good shake 2 to 3 times throughout.

    After 24 hours, add the Coriander Seeds, Lavender, Green Cardamom Pods, California Bay Leaves, and Jamaican Allspice Berries.

    Re-cover, shake, and let the mixture sit for another 24 hours, again shaking it 2 to 3 times during that period.

    Strain the solids out through a fine-mesh sieve or cheesecloth-lined funnel into a clean container.

    Wipe out the Mason jar to remove any leftover spice bits, then pour the infused gin back in and seal. Makes 4 cups.

    To serve: sip over ice, build into a classic martini, or stretch with tonic or soda water.
