Ingredients

Pine & Pepper Spices

⅜ cup Vanilla Bean Sugar

  • 6 jars' Tomatoes, cored and roughly chopped (enough for about 6 half-pint jars when reduced)
  • 2¼ cups Granulated sugar
  • 1 Lemon, juiced

Directions

    Sterilize the jars, lids, and bands by boiling for 10 minutes just before filling.

    Combine the tomatoes, granulated sugar, Vanilla Bean Sugar, and lemon juice in a wide, heavy-bottomed saucepan. Bring to a simmer over medium-high heat, stirring to dissolve the sugars.

    Meanwhile, toast the Mulling Spices in a small dry skillet over medium heat for about 3 minutes, until fragrant.

    Transfer to a spice grinder and grind into a fine powder, then stir into the simmering tomatoes.

    Cook at a steady simmer for 45 minutes to 1 hour, stirring often, until the jam has reduced, turned syrupy, and thickened slightly. (Very juicy tomatoes may need a little longer.)

    Ladle into the sterilized jars and seal. Beautiful on a cheese plate or as a stand-in for ketchup on a burger — also lovely spread on toast with a fried egg on top. Makes about 6 half-pint jars.
