  • 1 lb. Raw peanuts or green peanuts, in shell*
  • Water, enough to cover

*Note: Raw peanuts have been air-dried for storage but aren’t cooked. You’ll find them at markets near peanut-growing regions or online — green peanuts are the freshest version if you can find them.

Directions

    Place the peanuts in a colander and rinse them well.

    Tip them into a stockpot and add enough water for the peanuts to float about 2 inches below the top of the pot.

    Stir in the Kosher Salt and your chosen seasoning — Gulf Coast Creole Blend or Cajun Blackening — and bring everything to a rolling boil.

    Lower the heat to a gentle simmer, cover, and let the peanuts cook for 8 to 10 hours for raw peanuts, or 5 to 6 hours for green peanuts, until they’re soft, salty, and easy to slip from the shell.

    Check occasionally and add a little water if the level drops below the peanuts.

    Serve warm or cold as a picnic or backyard barbecue snack — set out an extra bowl for the shells. Makes 1 lb.
