Honey Spiced Peach Jars
Ingredients
Pine & Pepper Spices
- 8–10 lbs. Peaches, peeled and sliced
- 4 cups Water
- 2 cups Honey
- 1 cup Sugar

Divide the sliced peaches between 8 sterilized pint canning jars, packing them snugly and leaving ½ inch of headspace at the top.

In a small saucepan, combine the water, honey, and sugar and bring to a boil, stirring until the sugar dissolves.

Whisk in the Peach Pie Spice and let it bubble for another minute.

Carefully ladle the warm spiced syrup over the peaches in each jar, making sure the slices are fully submerged but still leaving ½ inch of headspace.

Wipe the rims clean and seal each jar with a 2-piece canning lid.

Process the jars in a boiling water bath for 20 to 25 minutes, then lift onto a towel and let them cool to room temperature.

Store in a cool, dark spot for up to a year. Makes 8 pints.

To serve: spoon over grilled chicken or pork, toss into a green salad with arugula and blue cheese, or layer with vanilla ice cream and crushed shortbread for a quick parfait.
