  • 2½ cups Sharp cheddar cheese, finely shredded (about 6 oz.)
  • 2 cups All-purpose flour
  • 1 cup Cold unsalted butter (2 sticks)
  • 2 Egg yolks
  • ¼ cup Water

Directions

  1. 1

In a food processor, pulse the flour, cheddar, Kosher Salt, and Georgia Boys All-Purpose BBQ Rub together until just combined.

  2. 2

Using the large holes of a box grater, shred the cold butter into the flour mixture (or add it in small pieces). Pulse until the mixture looks like coarse crumbs.

  3. 3

Whisk the egg yolks with the water and add to the food processor. Pulse until the dough looks like moist crumbs that pinch together easily.

  4. 4

Turn the dough out onto a lightly floured work surface and, with the heel of your hand, gently push it into a smooth ball.

  5. 5

Divide in half, shape each piece into a log about 1½ inches across, wrap in parchment, and chill at least 1 hour.

  6. 6

Heat the oven to 350°F and line two baking sheets with parchment. Slice the logs into rounds about ¼-inch thick and lay them on the sheets with a little space between each.

  7. 7

Bake for 12 to 15 minutes, until the edges are deeply golden. Cool on the pan a few minutes before transferring to a rack. Makes about 4 to 5 dozen crackers.

  8. 8

Swap it: any BBQ rub you love will work here — try Carolina Red BBQ Rub, Smoky Sweet BBQ Chicken Rub, or Bear Creek BBQ Seasoning. To serve: a great party snack, lovely scattered over a green salad or piled onto a cheese board.
