BBQ Cheddar Crisp Crackers
Ingredients
- 2½ cups Sharp cheddar cheese, finely shredded (about 6 oz.)
- 2 cups All-purpose flour
- 1 cup Cold unsalted butter (2 sticks)
- 2 Egg yolks
- ¼ cup Water

In a food processor, pulse the flour, cheddar, Kosher Salt, and Georgia Boys All-Purpose BBQ Rub together until just combined.

Using the large holes of a box grater, shred the cold butter into the flour mixture (or add it in small pieces). Pulse until the mixture looks like coarse crumbs.

Whisk the egg yolks with the water and add to the food processor. Pulse until the dough looks like moist crumbs that pinch together easily.

Turn the dough out onto a lightly floured work surface and, with the heel of your hand, gently push it into a smooth ball.

Divide in half, shape each piece into a log about 1½ inches across, wrap in parchment, and chill at least 1 hour.

Heat the oven to 350°F and line two baking sheets with parchment. Slice the logs into rounds about ¼-inch thick and lay them on the sheets with a little space between each.

Bake for 12 to 15 minutes, until the edges are deeply golden. Cool on the pan a few minutes before transferring to a rack. Makes about 4 to 5 dozen crackers.
