Ingredients

Pine & Pepper Spices

2¼ tsp., divided Peach Pie Spice

  • 3 oz. Mascarpone cheese
  • 3 oz. Goat cheese
  • 6 ripe Peaches, halved and pitted
  • 1½ Tbsp. Olive oil
  • 4 to 5 Slices prosciutto
  • 4 to 5 Sprigs of mint, roughly chopped

Directions

    In a small bowl, stir the mascarpone and goat cheese together with 1½ tsp. of the Peach Pie Spice until smooth. Set aside.

    Heat a well-oiled grill to medium-high.

    Lay the prosciutto slices on a small piece of foil and place on the grill. Turn every few minutes until just crisp. Pull from the grill, let cool, then roughly chop.

    Meanwhile, toss the peach halves with the olive oil and sprinkle with the Maldon Sea Salt.

    Grill the peaches cut-side down for about 3 min., until char marks appear, then flip and grill another 2 min., until just softened.

    To serve, smear a spoonful of the cheese mixture onto each peach half, scatter with the crisp prosciutto and chopped mint, and finish with a dusting of the remaining Peach Pie Spice.

    Serve as a handheld appetizer, or spoon over greens with a drizzle of balsamic vinegar and olive oil for a salad course. Makes 6 to 12 servings.
