Thin Crisp Sweet Onion Rings
Ingredients
Pine & Pepper Spices
- ⅓ cup All-purpose flour
- ⅔ tsp. Baking powder
- 2 tsp. Seasoning, your choice — Gulf Coast Creole Blend (above), Red Cloud Peak Seasoning, or Cape Hatteras Smoky Seafood Rub
- ½ cup Water
- ⅔ egg Use 1 small egg, lightly beaten — extra is fine
- 1 large Sweet onion
- As needed Vegetable oil, for deep frying
- To taste Salt

In a wide, shallow bowl, whisk the flour, baking powder, and your chosen seasoning together — Gulf Coast Creole Blend, Red Cloud Peak Seasoning, or Cape Hatteras Smoky Seafood Rub.

In a separate bowl, whisk the water and egg together until blended, then pour into the dry ingredients and whisk just until you have a smooth, pourable batter.

Slice the onion into very thin rounds and separate them into rings.

Heat about 2 inches of vegetable oil in a heavy saucepan to 350°F.

Working in small batches, drop a handful of onion rings into the batter, toss to coat, and lower them into the hot oil.

Fry until golden brown, about 1 to 2 minutes, then lift onto a paper-towel-lined tray and immediately sprinkle with salt.

Pile high as a topping for burgers or pulled-pork sandwiches, or serve them on their own with ketchup or aioli for dunking. Makes about 2 cups.
