Cozy Cheddar Hash Brown Bake
Ingredients
Pine & Pepper Spices
- ~5 oz.Cream cheese, room temperature (⅔ of an 8 oz. block)
- ⅓ cupSour cream
- ⅓ cup + 1½ Tbsp.Unsalted butter, melted & divided
- 3 Tbsp.Chicken stock or broth
- ~20 oz.Frozen shredded potatoes, thawed (⅔ of a 30 oz. bag)
- 1 smallYellow onion, diced
- 1⅓ cupsShredded cheddar cheese, divided
- ⅔ cupHand-crushed potato chips or corn flake cereal

Heat the oven to 350°F and lightly grease a baking dish.

In a large bowl, beat the cream cheese, sour cream, ⅓ cup of the melted butter, chicken stock, Chicken Fried Steak Seasoning, salt and pepper, and a pinch of Sweet Paprika together until smooth. (Smoked Spanish Hot Paprika works here if you'd like a little more heat.)

Fold in the thawed potatoes, onion, and about 1 cup of the cheddar. Scrape the mixture into the prepared dish and smooth the top.

Toss the crushed chips or corn flakes with the remaining melted butter and sprinkle over the casserole, followed by the rest of the cheddar.

Bake for 40 to 50 minutes, until the top is golden brown and the casserole is bubbling at the edges.

Rest for 5 minutes before serving. Makes about 7 servings.
