Sweet & Spicy Chile Glazed Shrimp Bites
Ingredients
Pine & Pepper Spices
- 3 Dried Thai chiles
- 1/2 lg. Red bell pepper, stemmed and seeded
- 1/2 Tbsp. Sugar
- 1/2 lg. Orange, zested
- 1 Tbsp. Rice wine vinegar
- 1½ Tbsp. Honey
- 1/2 tsp. Salt
- — Bamboo skewers, soaked in water 1 hour
- 1/2 lb. Large shrimp, shelled and deveined
- 1/2 Pineapple, peeled, cored, and diced
- 1/4 Red onion, finely diced
- 2 Tbsp. Fresh cilantro leaves, chopped
- 1/2 Lime, juiced
- — Salt and pepper, to taste

Soak the dried Thai chiles in warm water until softened, about 1 hour.

Pulse the softened chiles and red bell pepper in a blender or food processor until smooth.

Scrape into a large bowl and stir in the sugar, orange zest, rice wine vinegar, honey, salt, Ground Coriander Seeds, and Ground Ginger.

Thread the shrimp onto the soaked skewers, add to the bowl, and turn to coat. Marinate for 20 to 30 minutes.

Meanwhile, make the salsa: toss the pineapple, red onion, cilantro, lime juice, and remaining Ground Ginger in a bowl and season with salt and pepper.

Heat a grill or grill pan to medium-high. Grill the shrimp about 2 minutes per side, brushing with extra marinade, until just opaque and lightly charred.

Sprinkle with the White Sesame Seeds and serve warm alongside the pineapple salsa. Makes 2 servings.
