  • 3 Dried Thai chiles
  • 1/2 lg. Red bell pepper, stemmed and seeded
  • 1/2 Tbsp. Sugar
  • 1/2 lg. Orange, zested
  • 1 Tbsp. Rice wine vinegar
  • 1½ Tbsp. Honey
  • 1/2 tsp. Salt
  • Bamboo skewers, soaked in water 1 hour
  • 1/2 lb. Large shrimp, shelled and deveined
  • 1/2 Pineapple, peeled, cored, and diced
  • 1/4 Red onion, finely diced
  • 2 Tbsp. Fresh cilantro leaves, chopped
  • 1/2 Lime, juiced
  • Salt and pepper, to taste

Directions

  1. 1

Soak the dried Thai chiles in warm water until softened, about 1 hour.

  2. 2

Pulse the softened chiles and red bell pepper in a blender or food processor until smooth.

  3. 3

Scrape into a large bowl and stir in the sugar, orange zest, rice wine vinegar, honey, salt, Ground Coriander Seeds, and Ground Ginger.

  4. 4

Thread the shrimp onto the soaked skewers, add to the bowl, and turn to coat. Marinate for 20 to 30 minutes.

  5. 5

Meanwhile, make the salsa: toss the pineapple, red onion, cilantro, lime juice, and remaining Ground Ginger in a bowl and season with salt and pepper.

  6. 6

Heat a grill or grill pan to medium-high. Grill the shrimp about 2 minutes per side, brushing with extra marinade, until just opaque and lightly charred.

  7. 7

Sprinkle with the White Sesame Seeds and serve warm alongside the pineapple salsa. Makes 2 servings.
