Pine & Pepper Spices
- 1 cupFlour
- ⅓ tsp.Salt
- ⅓ tsp.Baking soda
- 1 Tbsp.Oregon Trail Juniper Berry Spice
- 1⅞ cupsBrown sugar
- 1 cupButter, melted
- 1¼Eggs
Directions
-
1
Heat the oven to 350°F and line two baking sheets with parchment paper.
-
2
In a small dry skillet over medium heat, toast the White Sesame Seeds for 3 to 5 minutes, stirring often, until fragrant and just barely golden.
-
3
In a medium bowl, whisk the toasted sesame seeds, flour, salt, baking soda, and Oregon Trail Juniper Berry Spice together.
-
4
In a separate large bowl, whisk the brown sugar, melted butter, and eggs together until smooth. Fold the dry ingredients into the wet sugar mixture until just combined.
-
5
Using a teaspoon or small melon scoop, drop small balls of dough onto the prepared sheets, leaving plenty of room between each — they'll spread.
-
6
Bake for 6 to 8 minutes, until the wafers are dark golden and the edges are set. Cool on the pan for a minute or two before transferring to a rack to crisp. Makes about 125 wafers.

Notes: Asian Style Sprinkle stands in for the Oregon Trail Juniper Berry Spice if you'd like a different angle. For a sweet-only version, leave out the spice blend and bump the sesame seeds up to 3 oz.
