¼ cup Cumin Seeds

  • 4 cans Garbanzo beans (15 oz. each), drained
  • 2–6 cloves Garlic, chopped
  • 2 large Lemons, juiced
  • ½ cup Water
  • 2–4 Tbsp. Olive oil
  • To taste Salt

Directions

    Toast the Toasted Sesame Seeds and Cumin Seeds together in a small dry skillet over medium heat, shaking the pan, for 1 to 3 minutes, until fragrant and lightly golden.

    Immediately tip them into a food processor or blender so they stop cooking. Pulse a few times for a coarse texture, or run for 30 seconds for a finer grind.

    Add the garbanzo beans, garlic, lemon juice, water, and Ground Sumac Berries. Blend until smooth.

    With the blender running, slowly drizzle in the olive oil until the hummus is silky and pourable. Taste and season with salt.

    To serve: top — but don't stir in — with your favorite salsa, chopped olives, bruschetta, sun-dried tomatoes, pine nuts, pomegranate seeds, or a mix of paprika and Za'atar Seasoning. Serve with warm pita, crisp crackers, or crudités.

    Note: you can use already-toasted sesame seeds and pre-ground cumin in their place, but freshly toasting and grinding the seeds yourself gives a much deeper, more fragrant hummus.
