Ingredients

Pine & Pepper Spices

To taste (start with 1 tsp.) Saffron Salt

  • 1 cup Rolled oats
  • ⅔ cup Whole pecans
  • ⅓ cup Shelled pistachios
  • ⅓ cup Macadamia nuts
  • Scant 3 Tbsp. Coconut oil
  • Scant 3 Tbsp. Maple syrup
  • Scant 3 Tbsp. Dried apricots, sliced
  • Scant 3 Tbsp. Dried cranberries

Directions

    Heat the oven to 200°F. In a large bowl, toss the oats and nuts together.

    Melt the coconut oil in a small saucepan over medium heat, then pull it from the heat and whisk in the maple syrup and Saffron Salt.

    Pour the warm oil mixture over the oats and nuts and stir until everything is evenly coated.

    Spread the granola in a thin layer on a baking sheet. Bake for 30 minutes, stirring every 15 minutes for even toasting.

    Pull from the oven and immediately toss with the dried apricots and cranberries.

    Let the granola cool completely on the sheet before transferring to a sealable jar. Makes 8 servings.

    To serve: spoon over yogurt, scatter onto fruit, or eat by the handful straight from the jar.
