Mocha Cocoa Pepper Crackers

- ¾ cup All-purpose flour
- 1 stick Unsalted butter, softened
- 5 Tbsp. Granulated sugar
- 1 Tbsp. Brown sugar
- 1 large Egg yolk

Sift the flour, Natural Cocoa Powder, ½ tsp. of the French Fleur de Sel, Cayenne Chile Powder, and Midnight Mocha Spice into a medium bowl.

In a separate large bowl, beat the butter and both sugars on low speed until smooth. Mix in the egg yolk and beat until well combined.

With the mixer still on low, add the flour mixture in small additions, working just until the dough pulls together.

Tip the dough out onto a lightly floured surface and knead briefly until smooth — it should feel like pastry dough.

Shape into a single log about 1½ inches across, wrap in wax paper, and chill at least 30 min. to firm up.

Heat the oven to 350°F. Slice the chilled log into rounds about ⅛- to ¼-inch thick.

Press the tines of a fork gently into the top of each cracker to make three small impressions. Sprinkle with the remaining salt and bake for 12 min.
